From these olives, we obtain the Extra Virgin Olive Oil that the Fattoria dell'Aiola produces every year and which is the key to the Mediterranean diet and cuisine. The oil is obtained from a careful selection of olives of the typical Chianti varieties - Frantoio, Moraiolo, and Leccino. Its scent is fresh, harmonious, fruity, and quite intense.
