In the middle of woods that frame the Chianti Classico vineyards, on the hills, under the hot sun of Tuscany, between the straight lines of vines and cypresses, the olive groves rise. From the prehistory times when a man took his first steps, grapes and olives have always been the generous fruits of these saint lands.
From these olives, we obtain the Extra Virgin Olive Oil that the Fattoria dell’Aiola produces every year and which is the key to the Mediterranean diet and cuisine. The oil is obtained from a careful selection of olives of the typical Chianti varieties — Frantoio, Moraiolo, and Leccino. Its scent is fresh, harmonious, fruity, and quite intense. The taste is inviting, soft, with delicious notes of artichoke and almond in the aftertaste.
