First, a welcome toast at our fabulous panoramic terrace! After a glass of a white Bianco dell’Aiola or a cheerfully sparkling Brut Rosè, our expert guide will take to the vineyards and tell you about our winemaking traditions, while you stroll sipping a Chianti Classico, born from the Sangiovese vines around you. We will talk about the estate philosophy and about how a proper respect for terroir is paramount. Standing at the highest point of the estate, 440 m a.s.l. you will enjoy the view of the gentle Chianti hills and the Arbia river valley. The tour continues in the cellar, where you will learn the secrets of winemaking, from harvesting to bottling via fermentation and ageing. Some photos with imposing oak barrels are a must! Selfies in vines is a must too!

Visiting Fattoria della Aiola is so much more than a standard wine tasting: get ready to become a time traveler going through centuries to witness historic battles. We will start our journey at the Aiola museum with a welcome toast of Brut Rosé. Then off to the mighty fortress of Aiola where the walls will whisper their stories of courage and loyalty. From medieval times to the last season harvest — we continue our experience in the Aiola cellar learning how wines are made and aged. You will taste Chianti Classico, Chianti Classico Riserva and two Tuscan IGT — a white and a Rosé, paired with a selection of local cheese and cured meats, and will try our Extra Virgin Olive oil with fresh Tuscan bread.

Tasting in a group

We have excellent experience of working with tourist groups: the program includes a visit to the cellar where we explain and illustrate the full cycle of wine production from fermentation to maturation, ageing and storage. At the Vinsantaia Museum, we will show the vintage winemaking equipment once used at our production site.
From theory to practice — wine tasting is offered in our spacious wine shop, on the panoramic terrace or in the historical Castle. You will learn the secrets of Aiola in your own language. We speak Italian, German, English, French and Russian.

Dopo il brindisi di benvenuto all' Aiola sulla nostra terrazza panoramica, con un calice di vino Bianco IGT o Brut Rose', una guida esperta vi accompagnerà in un tour tra i vigneti, dove sentirete le storie legate alla nostra tradizione vitivinicola sorseggiando il Chianti Classico dell’Aiola, lì prodotto. Qui sarete introdotti alla nostra filosofia aziendale e il rispetto per il terroir. Dall’alto dei suoi 440 metri s.l.m., punto più alto della proprietà, potrete godere il verde delle morbide colline del Chianti e della Val D’Arbia. Il tour continuerà nelle cantine, dove vi racconteremo come viene fatto il vino: dalla vendemmia alla bottiglia, dalla fermentazione all’invecchiamento. Durante il percorso assaggerete 4 dei migliori vini prodotti dalla Fattoria dell’Aiola. Una visita alla Cantina della Fattoria della Aiola offre ben più di una solita degustazione: preparatevi a un’esperienza che vi portera fra i seccoli e le battaglie storiche. Al vostro arrivo, facciamo il brindisi di benvenuto nel museo dell’Aiola con un calice di Brut Rose' dopo di che andiamo alla Fortezza dove vi raccontiamo la sua grande storia ai tempi medievali. Dopo ci spostiamo alla cantina d’invecchiamento, dove la guida ci spiega come viene fatto il vino: dalla vendemmia alla bottiglia. Assaggiamo il Chianti Classico, il Chianti Classico Riserva, il Bianco IGT e il Rosato IGT. Tutto accompagnato da un piattino di affettati, formaggi tipici toscani e olio Extra Vergine chiantigiano di nostra produzione.

Fattoria della Aiola è facilmente raggiungibile per gruppi in pullman. Le proposte comprendono la visita in cantina, durante la quale viene spiegato il ciclo di produzione del vino dalla fermentazione all’invecchiamento nelle botti di rovere. Segue la degustazione dei prodotti, accompagnata da spuntini, nella nostra ampia enoteca con terrazza panoramica o nella Villa storica. Nella vostra lingua madre, rivivrete le emozione più intime della nostra realtà centenaria. Eventuali richieste differenti potranno essere concordate di volta in volta.

Nach der Begrüßung auf unserer Panoramaterrasse mit einem Glas Weißwein oder Brut Rosé führt Sie ein fachkundiger Guide durch die Weinberge, in denen die Trauben für unseren Chianti Classico wachsen. Hier werden Sie in unsere Weinbautradition und Unternehmensphilosophie eingeführt und wir demonstrieren Ihnen, was einen Wein einzigartig macht: unser Terroir. Vom höchsten Punkt in 440 Meter über dem Meeresspiegel, genießen Sie einen wunderbaren Ausblick über die weichen Hügel des Chianti-Gebiets und das Arbia Tal. Fattoria della Aiola ist leicht für Busgruppen erreichbar. Unsere Angebote umfassen einen Besuch im Weinkeller, in dem der Prozess der Weinherstellung von der Gärung bis zur Reifung in Eichenfässern erklärt wird. Es folgt eine Weinprobe, begleitet von einem kleinen Imbiss, in unserer großen Enoteca mit Panoramaterrasse oder in der historischen Villa. Gruppen werden von unseren erfahrenen Führern in ihrer Muttersprache willkommen geheißen und geben den Gästen spannende Einblicke in unsere hundertjährige Realität. Eventuelle anderweitige Wünsche können im Einzelfall vereinbart werden.

Chianti Classico DOCG

Everybody has heard the word "Chianti", but very few people know that the original wine, now called "Chianti Classico" was born on the Chianti hills, where Fattoria della Aiola is situated. The noble Chianti Classico wine has been produced for centuries in the Vagliagli area, and the territory where it is made has become the first officially registered winemaking zone more than 300 years ago, in 1716. The Black Rooster, always present on the Chianti Classico bottles, is the historical symbol of the Chianti Military League. Nowadays, the strict norms of the Chianti Classico production require this wine is made with minimum 80% Sangiovese and up to 20% of autochthonous or international red grape varieties present in Tuscany. Fattoria della Aiola makes its Chianti Classico blending at least 90% of Sangiovese with smallish quantities of Colorino and Merlot.

IGT Toscana

Where the creativity of the winemakers reflects the spirit of the territory.

Free from stylistic constraints, Toscana IGT wines can be made in almost any imaginable form: dry or sparkling, red, white or rosé. It leaves the choice of grapes, production method and characteristics to the winemaker, as long as at least 85% of the grapes are coming from the specified geographical area.

In the late 60's the adventurous winemakers created what later became known as the "SuperTuscans" blending Sangiovese with Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot. Aiola was among those visionaries, and our IGT wines are always bold and free-spirited.

Chianti Classico DOCG

Il marchio, da sempre presente sulle bottiglie di Chianti Classico, è il Gallo Nero, simbolo storico della Lega Militare del Chianti. Il disciplinare per la produzione del vino prevede una percentuale minima dell'80% di Sangiovese e fino a un 20% di uve autoctone, come il Canaiolo e il Colorino o anche varietà internazionali come Cabernet Sauvignon e Merlot. Aiola produce il suo Chianti Classico con Sangiovese fino al 90% cui è aggiunto Colorino e Merlot in parti variabili.

I vini a indicazione geografica tipica "Toscano" o "Toscana", sono ottenuti da uve provenienti da vigneti composti, nell’ambito aziendale, da uno o più vitigni idonei alla coltivazione nella regione Toscana.

Chianti Classico DOCG

Der Schwarze Hahn, das historische Symbol des militärischen Bundes Lega del Chianti, ziert als Markenzeichen schon immer die Flaschen des Chianti Classico Weins. Die Produktionsspezifikation sieht für den Chianti Classico einen Mindestanteil von 80% Sangiovese sowie einen Anteil von bis zu 20% einheimischer Trauben wie Canaiolo und Colorino oder internationaler Rebsorten wie Cabernet Sauvignon und Merlot vor. Aiola produziert seinen Chianti Classico mit 90% Sangiovese, dem Colorino und Merlot hinzugefügt werden.
